Spinach rice with lemon. Spring onions and ouzo
Greek cuisine – Vegan – Appetizer
Servings 6: Preparation time (20 + 20 minutes)
Calories: Spinach rice with lemon 275 tsp / 200gr.
Ingredients:
1200g Spinach short
100 g of Armporio or Carolina rice
100 g of lemon juice
4 spring onions
1 shot of ouzo
500 g hot broth from the stalks
Salt and pepper
40 g extra virgin olive oil
Implementation:
Soak the spinach and onions very well. From the thick stalks of spinach that are removed, put 500 g of water and boil for 10 minutes.
In a saucepan pour the olive oil and onions over medium heat.
Add the rice and mix well, continuing for another 2 minutes.
Add the lemon juice and ouzo, and after 1 minute add the spinach as well as the hot broth from the stalks.
Stir at regular intervals and bake for about 12 minutes
Served with Greek yogurt or feta
Accompanied by retsina or a white wine
